Step 1: Pumpkin Cream


Clean, peel and, after having removed the seeds, cut the pumpkin into little pieces.

Then put it in a pot, where you will have sautéed the garlic, together with the julienne cut onions.

Salt and brown the pumpkin till it has lost all its water, thus cover with broth and cool it for one hour, one hour and half.


Whip it with a mixer and season  with salt and pepper…and your cream is ready!


Step 2: the shrimps

Remove the shell, but leave the head. Clean the shrimps and roll them up with the Kanafeh pastry (that is a  cheese pastry soaked in sweet sugar-based syrup).

After you have added oil and salt, put the shrimps in the oven – you can also fry them – for 3 minutes.

Step 3: Dish it up

Pour the hot creme in a bowl, and settle in the shrimps. A sprinkle of balsamic vinegar and,  bon appétit!
